Dried kokum is a deep purple to black fruit rind derived from the Garcinia indica tree, native to the western coastal regions of India. Known for its tangy, sour flavour with a slight fruity undertone, dried kokum is traditionally used as a natural souring agent.  It imparts a rich, deep colour and distinctive taste to a variety of dishes and is a preferred alternative to tamarind in many regional recipes.  Dried kokum is used to balance flavours, enhance sourness, and add a deep red hue to dishes. Often added whole or as a soaked extract.

Common Uses

  • :Curries & Lentils: Add 2–3 pieces towards the end of cooking to fish curries, lentil stews, and coconut-based gravies.
